What Makes Neapolitan-Style Pizza Different?
Neapolitan pizza refers to the style that was pioneered and refined over centuries in Naples, Italy. It is known for its hand-stretched dough that is crunchy on the outside, yet soft and moist on the inside. The sauce must be made with a specific type of tomatoes, either San Marzano tomatoes, or a different variety grown in the volcanic plains surrounding Mt. Vesuvius. High-quality Mozzarella cheese is used, and the pie is finished off with basil and extra-virgin olive oil. The pizza is then baked for a very short time (usually just over a minute) in a high-temperature wood-fired oven.

There is a special certification for authentic Neapolitan pizza chefs, or pizzaiolos, from the prestigious Associazione Verace Pizza Napoletana Academy in Naples, Italy. The certification requires a set of quality standards to be met by the chef and by the restaurant, including the use of all-natural and fresh ingredients. The chefs of Vero Amore, Casa Marana, and Bailey’s are all either certified pizzaiolos, or have trained under them.
